Dos Déus Estrelles is the classic vermouth of Priorat B&D Lab (Bellmunt del Priorat), in the line the house defines as "tradition and innovation" matured in Jerez butts between three and five years. According to prioratlab.com, it is a traditional Spanish vermouth with a modern approach: medium body, predominance of bitter and sweet notes from the Jerez barrels, little added sugar and characteristic amber-red colour. Made in the Priorat and aged by solera system in selected butts: 60% remains three years and 40% at least one year. Distinct from the Origins range — younger and experimental — Estrelles represents the mature expression of the Dos Déus project, conceived for traditional aperitivos and to lead cocktails with personality. Gold at the Premios Girovi 2021. Priorat Lab operates from carrer Font Vella 13 in Bellmunt del Priorat, within Catalonia's most prestigious wine ecosystem. Nose and palate
The official sheet describes a nose with elegant, deep vegetal notes, classic vermouth herbs accompanied by oxidation and Pedro Ximénez — a register that anticipates a generous profile without losing finesse. On the palate, a very pleasant entry with predominance of bitterness integrated with spice, herbs and flowers over a generous wine background; the balance between bitterness and sweetness from Jerez barrels is the axis of the whole. The finish is medium, with generous wine notes, a bitter point and balsamic liquorice touches that prolong the experience without heaviness. Medium body, silky texture, acidity that refreshes the barrel passage. Compared with Dos Déus Reserva — minimum three years with 47 botanics and a more balsamic profile — Estrelles offers more frontal bitterness and more contained sweetness; against Origins Red, it brings oxidative depth and solera complexity. The amber-red colour communicates Jerez ageing before the first sip. A vermouth for palates that value bitterness as virtue, not defect.
How to serve it
Priorat Lab recommends serving Dos Déus Estrelles between 10 and 12 °C. The classic form is solo with ice and a grapefruit slice, a citrus that dialogues with Jerez notes and herbal bitterness. Also works combined equally with ginger beer or ginger ale, a format the house promotes to soften bitterness without dissipating character. In cocktails, it is a robust base for Negroni, Manhattan or author combinations requiring vermouth with body and solera notes; its little added sugar makes it interesting in recipes seeking dry-bitter balance. As an aperitivo, pairs with Catalan charcuterie, cured cheeses and preserves; the generous profile supports fatty or salty tapas. In a balloon or low glass, without excess ice that dilutes barrel complexity. For those who prefer sobriety, a squeezed grapefruit twist over ice is sufficient. Estrelles is not a quick-consumption vermouth: it invites pause and conversation.

Priorat B&D Lab makes Dos Déus Estrelles in Bellmunt del Priorat (Tarragona), with maturation in solera system in selected Jerez butts: 60% for three years, 40% for a minimum of one year.
