Nose and palate
The official sheet describes a rich, deep nose: balsamic notes, liquorice, raisins, toasted caramel and Pedro Ximénez — an oxidative register that anticipates prolonged ageing. On the palate it is powerful and elegantly bitter, with character, sweet orange citrus notes and an earthy, spiced background that adds body and integrated bitterness. The finish is medium-long, with Pedro Ximénez notes that slowly transform into a clean, seductive oloroso register. Broad texture, Jerez sweetness that rounds without cloying, bitterness that persists in the aftertaste. Compared with Estrelles — medium body, predominant bitterness, more delicate bouquet — Reserva deploys greater balsamic density and PX complexity; against Origins, three years in selected barrels adds layers the young vermouth cannot reach. How to serve it
Priorat Lab recommends serving Dos Déus Reserva between 10 and 12 °C, simply with ice and a slice of grapefruit — a format the house promotes as ideal for appreciating the balance between bitterness and Jerez sweetness. Grapefruit adds citrus bitterness that dialogues with the forty-seven herbs and the candied orange notes of the profile. It also works in a cocktail glass without ice, very cold, for unhurried aperitifs where the evolution toward oloroso in the finish can be appreciated. In mixology, it is a base for Negroni or Manhattan with a Priorat-Jerez profile; its density supports bitter and gin without losing identity. Pairs with aged cheeses, foie, preserves and charcuterie; the balsamic and PX register complements fat and salt. Avoid excess ice that would dilute three years of barrel complexity. For special occasions, serve in a balloon glass with an olive or a skewer of candied orange. Reserva is not a quick-drinking vermouth: it invites conscious tasting.
