La Gaviota Mariola de Autor is the flagship vermouth of a Mallorcan project born among friends passionate about the aperitivo. Made 100% from hand-harvested Pedro Ximénez, fermented and aged one year in oak before a cold maceration of twelve Mediterranean botanicals over months. Sweetness and strength (15% vol.) come from the wine itself and added PX, with no external alcohol. The classic version inspired by terrace afternoons: pronounced botanicals, body, citrus edge and bitterness evoking eighties vermouth.

How to serve it

Chilled or on ice; perfect with chips, mussels, tapas and cheese. Also for Mediterranean terrace aperitivos.

Production context

Artisan Mallorca project; ~€17 at the official shop. The range also includes the sweeter “Sensual” and the white “Serena”. Each bottle is hand-checked before bottling.
