Vermut La Gitana
Overall impression
Vermut La Gitana is the vermouth revived by Bodegas Hidalgo La Gitana (Sanlúcar de Barrameda, founded 1792) from an original family recipe legendary at the house through the 19th and 20th centuries. Made with Palomino Fino, Oloroso Faraón and Pedro Ximénez Triana, aged at least twelve years in centenary American oak butts; after blending, infusion of aromatic herbs and botanicals for a further six months. Deep mahogany; complex spice and citrus aromas; balance and acidity with elegance that avoids excess sweetness per the winery. 15% vol., 75 cl. For Vermutpedia, La Gitana represents historic manzanilla-house Sanlúcar vermouth: oloroso, Triana PX and Cádiz solera.

How to serve it
Ideal as aperitivo with ice, neat or in cocktails; also after dinner per specialist distribution. Pairs with olives, preserves, cheeses and coastal tapas. Serve very cold in balloon glass or low tumbler; Sanlúcar acidity and semisweet profile invite orange slice or green olive. Temperature 8–12 °C.
Production context
Bodegas Hidalgo La Gitana makes the vermouth with Oloroso Faraón and Pedro Ximénez Triana (minimum twelve years in soleras and criaderas in hundred-year-old butts), wine blend and six months' botanical maceration. 15% vol., 75 cl. The winery, world reference for Manzanilla, lists the product in its official shop as a top-selling vermouth.
