How to serve it

Amillo shines very cold with ice and olive, classic Jerez aperitivo format balancing its mellowness and bitterness. The house orientates it to pairings with ham, nuts and aged cheeses; also works in a Negroni twist with Jerez gin, where density and oxidative notes add depth. Serve between 6 and 8 °C in low glass or wide tumbler; orange slice or orange peel enhances maceration citrus. For tasting, wine glass without ice allows appreciation of broad retro-aroma and raisin notes. Not light terrace vermouth: invites aperitivo with preserves, ibérico charcuterie and cheese.
