Vermut Clásico Francisco de Cala is the vermouth from Bodega Francisco de Cala (Jerez de la Frontera), artisan-made from aged Palomino and Pedro Ximénez wines —blend of sixteen-year oloroso and five-year PX per specialised distribution— without added sugar or chemicals: sweetness comes exclusively from PX. Cold, separate macerations of herbs, plants, roots and natural seeds from Alcornocales and Sierra de Grazalema parks; double ageing in American and French oak butts in soleras y criaderas system. Dark mahogany colour; vegetal notes, oloroso caramel and PX silkiness on nose and palate per international sheets. 15% vol., 75 cl. How to serve it
Serve with ice and orange slice —unanimous winery and distributor recommendation. Very cold in balloon glass for aperitivo with tapas, smoked fish and Jerez salted preserves. Works in Negroni or Americano when vermouth without added sugar but with natural PX sweetness is wanted. Temperature between 8 and 10 °C; French oak ageing adds roundness pairing with ibérico charcuterie and aged cheeses.
