Zarro Rojo
Vermutpedia Score: 6.7/10
Overall impression
Zarro Rojo is the emblem of bottled Madrid tap vermouth: Bodegas Sanviver has made it since 1968 in Fuenlabrada and is the sole bodega in the Community of Madrid at this production scale in vermouths, sangrías and liqueurs. The brand exports to more than twenty countries, but its soul remains in the castizo tabernas and terraces of the capital —'vivir Zarro, sentir Madrid'—. The red is the most emblematic variety of a range that includes white, reserva, gran reserva and the world's first organic vermouth.
Nose and palate
Mahogany tone with orange reflections. Intense nose of dried herbs, candied fruit and subtle floral notes, with a spiced background from American oak maceration. On the palate it is fleshy and flavoursome: well-measured initial sweetness, moderate bitterness and long, persistent finish. Classic tap-vermouth profile, easy to drink and very recognisable on Madrid bar.
How to serve it
With ice, orange and olive in the aperitivo ritual; also in 1 L, 1.5 L or 3 L bag-in-box formats for domestic consumption. The house recommends it as the essence of vermouth of always, bottled to bring the taberna experience home.
Production context
Made with Madrid wines and a secret blend of aromatic herbs macerated in American oak barrels, following artisan methods rooted in tradition. Bodegas Sanviver (4,000 m², capacity above 5 million litres a year) combines craft and modern technology. 15% vol., usual 1 L format. Sibling in the range with Vermut Marianito and Reserva and Gran Reserva references in 75 cl.
