Overall impression

Vermutpedia is re-evaluating the Italian catalogue; the Vermutpedia Score for this entry remains pending until the next tasting round. Antica Torino Dry rediscovers a Turinese recipe from the 1950s —«extract for dry vermouth» in the technical sheet— when the city grew around the vermouth industry, according to anticatorino.com. Cortese DOC white wine base; botanicals such as wormwood, musk yarrow, thistle, sage and hyssop, with mountain and garden herbs macerated separately. Part of the macerate is distilled in a pot still to reinforce artemisia, floral and spice notes and add longevity. Dry with 3.3% residual sugar —not extra dry— within the Vermouth di Torino disciplinare.

Nose and palate

Straw yellow (paglierino), clean and consistent. Intense, fine, mineral nose: spice, flowers, citrus and dried fruit. Dry, warm, smooth and persistent palate, with cinnamon, flowers, sage, minerals and almonds — the official house and technical-sheet description.

How to serve it

Ideal companion to gin or vodka in a Martini, Perfect Martini, Vodka Martini and Old Pal, according to Antica Torino. Also very cold with ice and lemon zest, or in a dry Americano and Rob Roy when a dry profile is wanted.

Production context

18% vol., 3.3% sugar, 75 cl (also 50 cl per technical sheet). Approx. 30 days maceration in 96° alcohol; pressing; partial distillation of the macerate; blend of macerate and distillate in Cortese DOC wine; affinamento in steel. Fills a gap in the Italian landscape by proposing organoleptic notes similar to twentieth-century vermouths, according to the house. Completes the trilogy with Rosso and Bianco. Antica Torino, Torino, since 2016.
