Overall impression

Vermutpedia is re-evaluating the Italian catalogue; the Vermutpedia Score for this entry remains pending until the new tasting round is complete. Ducato Vermouth di Torino Rosso belongs to the historic companies of the Consorzio del Vermouth di Torino IGP, according to vermouthditorino.org. Made in Piedmont as aromatised wine under the disciplinare protecting the denomination born in the eighteenth century at the Savoy court. Torinese rosso vermouth, consortium member alongside Carpano, Cocchi, Del Professore or Mancino.

Nose and palate

Vermouth di Torino rosso is characterised by a base wine — white, rosé or red — aromatised with artemisia absinthium and A. pontica from Piedmont, plus herbs and spices in 15–20 day hydroalcoholic infusion according to the consortium. Typical Torinese sweet-balsamic profile, balance between sugar and absinthe bitterness. The 17% vol. supports structure in classic cocktails while preserving the convivial, exportable character the consortium attributes to Turin vermouth since the nineteenth century.

How to serve it

Americano, Negroni or on its own with ice in the heart of Turin, in the line of Piedmontese vermouth aperitif culture. The consortium describes Torinese vermouth as a convivial drink exported worldwide since the nineteenth century, protagonist of cocktail culture. Serve cold between 6 and 8 °C with orange in Negroni and Americano, or neat with ice for the classic Mi-To ritual.

Production context

Seventeen degrees alcohol, 75 cl, no declared ageing. Production under consortium method: wine selection with structure and acidity, addition of botanical extracts, sugar or must, maturation in vats and bottling. Ducato distributes under the Vermouth di Torino IGP; consult the consortium or specialised Piedmont shops for acquisition.
