Chazalettes Extra Dry is an authentic dry Vermouth di Torino, made according to the family recipe that Clemente Chazalettes perfected after moving from Savoy to Turin in 1860 and founding the house in 1876. Unlike Bianco della Regina — more floral and aromatic — this style bets on less perfumed Piedmontese white wines that leave prominence to citrus freshness and Alpine herbs. At 18% vol., one of the highest in the Chazalettes range, it is conceived for classic mixology where vermouth must bring structure without dominating the spirit. The house presents it as an original extra dry faithful to the historic Turin profile, not a commercial adaptation to international taste. It forms the third pillar alongside Rosso and Bianco della Regina in the 2016 relaunch driven by Giovanni Chazalettes and the Bava family. Wine Enthusiast awarded 93 points in 2024; IWSC 2023 granted silver with 90 points, and World Vermouth Awards 2021 also recognised it with a silver medal.

Nose and palate

The nose opens with the vibrant freshness of citrus peel, the trait Chazalettes highlights as the Extra Dry seal against its sweeter siblings. That citrus luminosity balances with the roundness of Piedmontese mountain herbs: local wormwood brings indispensable vermouth bitterness, while memories of juniper and other Alpine spices build a dry, herbaceous profile. On the palate the vermouth is lively and direct, with fine bitterness that persists without becoming aggressive thanks to the 18% alcoholic structure. The sensation is drier and more vertical than Bianco della Regina: less candied fruit, more citrus and botanical tension. The close is clean and extended, with spices that invite use in combinations where vermouth competes on equal terms with gin. It is a genuine extra dry, not a semisweet white rebaptised.

How to serve it

Chazalettes recommends three cocktails that exploit its dry character. Dry & Tonic mixes equal parts Extra Dry and tonic, with lemon peel: the most direct and refreshing aperitivo in the range. Bronx Terrace combines one ounce vermouth, one ounce London dry gin and half an ounce lime juice, with lime peel garnish; a forgotten classic that recovers the product's citrus tension. Tuxedo is the most demanding: equal parts Extra Dry and gin, two spoonfuls absinthe, one maraschino and a few drops orange bitter, garnished with lemon peel and maraschino cherry. It also shines in classic Dry Martini, where its 18% vol. and dry profile sustain the vermouth-gin ratio without sweetening the whole.

Production context

The Chazalettes family began vermouth and liqueur production in Turin in 1876, becoming one of the historic Vermouth di Torino houses alongside Martini, Carpano or Cinzano. After decades of activity — including the 1907 royal grant — vermouth production ceased in the 1970s. The recipe archive survived thanks to Giovanni Chazalettes, who in 2016 found the necessary impetus to revive the formulas and return to Turin vermouths that, in the house's words, «have made history in this category and in the city itself». Extra Dry uses dry, low-aromatic Piedmontese white wines, per house tradition, infused with local Alpine herbs. 75 cl bottle at 18% vol. IWSC, Wine Enthusiast and World Vermouth Awards prizes confirm that this relaunch maintains the quality that made Chazalettes famous in the last century.
