Vittore White completes the classic Valencian trilogy of Cherubino Valsangiacomo: Valencia's oldest vermouth, made under the same formula devised by Benedetto Valsangiacomo at the beginning of the last century, according to valsangiacomo.es. The fifth generation recovers the original Vermouth Vittore label as a tribute to the Valencian aperitivo. Macabeo white-wine base with twenty-four Mediterranean and Alpine botanicals — a white that shares the family's artisan DNA with Rojo, Orange and Reserva, but in a straw-gold, herbal-citrus register built for spritz and white Martini rather than Negroni.
Nose and palate
Bright straw yellow. Balsamic aromas of oregano, fennel and thyme, a liquorice touch and citrus freshness. Entry with acidity-sweetness balance; cinnamon, liquorice and clove. Bitter herbal finish, long and persistent — official tasting note. Gentian, wormwood, coriander, savory, sage, chamomile, elder and orange peel appear in separate maceration and manual wooden-press workflow documented by the house. Compared with Rojo, the white is lighter and more citrus-forward; against Orange, it lacks the amplified orange-peel layer of Moscatel base.
How to serve it
With ice and lemon; spritz or white Martini. Classic Valencian aperitivo in a wide glass, according to local vermouth ritual. The house invites following the artisan process on its channels @VermouthVittore and @VittoreVermouth. Between 6 and 8 °C; works with soda for a lighter afternoon pour. Pairs with olives, almonds and Valencian conservas.
