Overall impression
Vittore Rojo is Cherubino Valsangiacomo's first bottle, since 1904: Valencia's oldest vermouth, made under the same formula devised by Benedetto Valsangiacomo at the beginning of the last century, according to valsangiacomo.es. Macabeo white-wine base with twenty-four Mediterranean and Alpine botanicals; the amber colour comes from grape-must caramel. The fifth generation recovers the original label as a tribute to the Valencian aperitivo. It is the reference red of a range that defines Valencian vermouth culture — historic, artisan and built for ice, orange and olive rather than bar-spec minimalism.
Nose and palate
Bright dark amber with iodine flashes. Balsamic aromas of oregano, fennel and thyme, liquorice and citrus freshness. Acidity-sweetness balance; cinnamon, liquorice and clove. Bitter herbal finish, long and persistent — official tasting note. The grape-must caramel tints the wine without adding industrial sweetness; wormwood and gentian close with Valencian herbal tradition rather than Piedmontese caramel.
How to serve it
Aperitivo with ice, orange and olive; classic Negroni. Cold service in a wide glass, in the line of the Valencian vermouth ritual. Between 6 and 8 °C; works in Americano when a semisweet Spanish red with herbal persistence is wanted.
