Overall impression

Vermut Valsangiacomo Reserva is the summit of Cherubino Valsangiacomo in Valencia: Macabeo white-wine base with twenty-four Mediterranean and Alpine botanicals — gentian, wormwood, coriander, savory, sage, oregano, chamomile, elder and orange peel — and five years' ageing in American oak barrels. Since 1904 the house has made this digestif under Benedetto Valsangiacomo's formula and the Vermouth Vittore brand; the fifth generation markets it with the family surname in tribute to 185 years of history. Limited production. It is the contemplative Vittore — barrel vanilla and balsamic depth over the same botanical architecture as Rojo and Blanco.

How to serve it

The house recommends drinking it very cold, without needing to dilute with water or ice, though it also works solo with ice and orange or in cocktails demanding wood depth. Its reserve character orientates it to after-dinner moments or aperitivos where botanical complexity and barrel vanilla are sought. Between 6 and 10 °C in a small wine glass or coupe. Not a litre vermouth for soda: treat it as a digestif pour.

Production context

Made in Valencia by Cherubino Valsangiacomo, makers of wines, vermouth and mistelas since the nineteenth century. Nine years ago the winery decided to age vermouth in American oak, leveraging its ageing experience. 15% vol., 75 cl. Vittore range: Blanco, Rojo, Orange and Reserva.
